It is Friday, the perfect day to happy hour at your own home! Why not? You can create your own home happy hour with a great drink and tasteful dip with crackers, and drink to a great weekend! Moms' Buzz joins you with these two great recipes for the cocktail drink and the dip:
Cocktail Drink
The Blueprint Martini - The Blueprint martini takes the crystal-clear, life-affirming qualities of vodka and adds the antioxidant properties of the blueberry.
1/4 cup vodka
1 tablespoon cointreau
1/2 teaspoon blue curacao
3 to 6 fresh blueberries
To Mix, combine vodka, Cointreau, and Curacao over ice in a shaker, and shake to combine. Strain into a martini glass. Drop in blueberries, and serve. Makes 1.
Dip
This funky colored martini can be complemented with this delicious Artichoke Dip from the Food Network Kitchen. Just by reading the ingredients you will savour it in your minds.
3/4 pound cream cheese, softened
1/2 cup milk or half-and-half
1/2 cup freshly grated Parmesan
2 scallions (white and green), chopped
1 clove garlic, minced
2 large eggs, beaten
1 tablespoon freshly squeezed lemon juice
2 cups drained jarred or thawed artichoke hearts, patted dry
1 teaspoon kosher salt Freshly ground black pepper, to taste
Pinch cayenne
Butter, as needed and assorted crackers
Preheat the oven to 350 degrees F. In a food processor, combine the cream cheese, milk, Parmesan, scallions, garlic, eggs, and lemon juice; pulse until smooth. Add the artichokes, salt, pepper, and cayenne, and pulse until just mixed, but still chunky. Transfer the mixture to a buttered, deep 4-cup casserole dish and bake until lightly browned and set, about 1 hour. Serve warm with crackers.
