Recipe: Mâche Salad with Avocado, Corn and Sweet Red Pepper
It's time for a quick and delicious salad recipe that we can have ready in a heart beat: a little chopping, a little peeling, a little mincing, a little dicing, a little rinsing, and ready to mix and toss.
Mâche Salad with Avocado, Corn and Sweet Red Pepper
1 tablespoon finely chopped shallot- 1-2 tablespoons fresh lime juice
- 3 tablespoons extra-virgin sunflower or olive oil
- 1/2 fresh chili pepper (serrano or jalapeno), seeded and minced
- Sea salt and black pepper
- 1 cup cooked fresh corn kernels
- 1 sweet red bell pepper, cut into small dice
- 1/2 cup cilantro leaves, roughly chopped
- 4 ounces Epic Roots Mâche*, rinsed
- 1 avocado, cut into wedges
Serves 4-6
In a small bowl, whisk the shallot, lime juice and oil. Add chili and season to taste with salt and pepper. Combine corn, sweet pepper, and cilantro in a small bowl and toss with 1/3 of the vinaigrette. Season again with salt and pepper if needed. Place the Mâche and avocado in a large bowl and gently toss with remaining vinaigrette. Divide the corn mixture and salad between each plate.
