Recipe: Caesar Salad Dressing
Caesar salad is everyone's favorite amongst friends and family. Often times to simplify our lives, we just grab a salad dressing bottle straight from the supermarket to make the Caesar Salad at home. You won't believe how easy it is to homemake this dressing and keep it refrigerated for a week or so. The good news too is that you can make it as "lite" and as "organic" as you'd like when you pick your own ingredients, and this particular recipe is mayonnaise-free! Watch this video by Rachel Edelman for About.com Food. She will show you how to make your own Caesar salad dressing that you will absolutely love!
Caesar Salad Dressing Ingredients
- 1 clove of garlic, minced
- 1 teaspoon Dijon mustard
- 1 tablespoon fresh lemon juice
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon anchovy paste
- 1/2 teaspoon salt
- 1/4 teaspoon fresh ground pepper
- 2 tablespoons olive oil
- 1 tablespoon Parmesan cheese
Blend the Ingredients
In a mini food processor or blender, place the 2 teaspoons of minced garlic, 1 teaspoon of Dijon mustard, 1 teaspoon of Worcestershire sauce, 1/2 teaspoon of anchovy paste, 1/2 teaspoon of salt, 1/4 teaspoon of fresh ground pepper, and 1 tablespoon of Parmesan cheese.
Cut a lemon, and squeeze half into the cup. Pulse the mixer a few times to combine these ingredients. Then, while mixing, add 2 tablespoons of olive oil.
Serve the Caesar Salad Dressing
It is nice to put the dressing in the refrigerator for about an hour before serving. Serve with lettuce, extra Parmesan cheese, and croutons. This dressing tastes great with chicken or shrimp and on sandwiches and salads.
Bon apetit!
